Lemon meringue pie ice cream

375 g of lemon curd
105 ml of liquid cream
105 g of Greek yogurt
3 tsp.’vanilla extract
1 pinch of salt
60 g of meringue
Directions
- Prepare the lemon base
Pour the lemon curd and cream into a large bowl. Mix gently with a whisk or maryse until the texture becomes smooth and homogenous. This step softens the lemon curd so that it blends easily with the other ingredients. - Add creamy ingredients
Add the Greek yoghurt, vanilla extract and pinch of salt. Whisk vigorously to obtain a smooth, lump-free mixture. The Greek yoghurt adds a slight acidity reminiscent of lemon tart, while enhancing the creaminess. - Freezes the preparation
Pour the mixture into the bowl of your Ninja Creami Deluxe. Smooth the surface with a spatula to ensure even freezing. Place the bowl flat in the freezer and leave to rest. 24 full hours. - Turns to ice
The next day, place your frozen bowl in the Ninja Creami. Start the program Ice Cream The machine will transform your base into a creamy ice cream in just a few minutes. - Adjust texture as needed
Once the cycle is complete, check the texture. If it's a little too firm, add about 3 to 4 tablespoons of very cold milk on top and repeat the cycle. Re-spin. This makes for an even smoother ice cream. - Incorporate the meringue
Break your meringue into irregular pieces (neither too big nor too small) and add them to the bowl. Then select the Mix-in or Extra Mix-in so that the machine distributes the pieces throughout the ice cream, without crumbling them completely. - Tasting
Your lemon meringue pie ice cream is ready! You can serve it as is, or decorate with fresh lemon zest, extra meringue crumbs or even a drizzle of lemon curd to bring out the pastry side.
Notes
- You can adjust the lemony intensity by adding a little more lemon curd if you want a tangier flavor, or increase the amount of Greek yogurt to soften the taste.
- If you'd like even more of a classic lemon tart, add a few speculoos or butter cookie crumbs to the glaze for a “shortbread” effect.
