Honey Ice Cream Recipe for Ninja Creami

300 ml of whole milk
60 g of dripping honey (prefers a floral honey such as lavender, heather or flowers)
2 egg yolks
1 pinch of fine sea salt
40 g of granulated sugar
Directions
- Heat the milk
Heat the milk in a medium saucepan over medium heat for 2 to 3 minutes, until steam forms. - Whisk the base
Whisk together the honey, egg yolks, salt and 40g of sugar until well combined and slightly frothy. - Temper and combine
Gradually pour the hot milk into the honey mixture, whisking constantly until fully incorporated. Transfer the mixture to the saucepan. - Cooking the custard
Place the pan over medium heat, stirring constantly with a spatula. Cook until the temperature reaches 82°C on an instant-read thermometer, approximately 3 to 4 minutes. - Filter and cool
Pass the mixture through a fine sieve directly into your machine's container. Place the container in an ice bath. Once cooled, seal with the storage lid and freeze for 24 heures. - Prepare the work surface for the brittle
While the base is in the freezer, prepare the caramel crunch. Line a baking sheet with non-stick parchment paper. - Cook the caramel
Heat the remaining 20g of sugar in a small saucepan over medium-high heat for 3 to 4 minutes. While cooking, gently swirl the pan but never stir with a spoon, otherwise the sugar may crystallize. When the sugar turns a deep amber caramel and reaches 170°C on a thermometer, immediately pour it onto the prepared baking sheet. Let it cool completely, then break the caramel into small pieces. Store in an airtight container if you are not using it right away. - Install the machine
Remove the ice cream base from the freezer, take off the lid, and place the tub in the outer bowl. Install the paddle in the lid and lock the assembly onto the outer bowl. Place the entire assembly onto the motor base and lock it in place. - Ice Cream Program
