50 g of caramel popcorn (homemade, chilled, or bought directly from the supermarket)
300 ml of full-fat liquid cream
30 g of sugar (optional — the caramel popcorn already sweetens the base nicely, adjust to your taste)
1 tsp of’vanilla extract
100 ml of whole milk
Directions
- Popcorn infusion
Set aside about 30 grams of caramelized popcorn (for the pieces, step 5). In a saucepan, gently heat the cream with the remaining popcorn. Let it simmer slightly, then remove from the heat and let it infuse for 15 to 20 minutes, allowing the cream to fully absorb the caramel-popcorn flavor. - Filtering
Strain the infused cream through a fine-mesh sieve (or strainer) to remove any softened popcorn pieces. Gently press with the back of a spoon to extract as much flavor as possible from the popcorn before discarding. - Assembling the base
In a bowl, mix the still-warm, strained cream with the sugar (if using) until completely dissolved. Add the milk and vanilla extract, and whisk until well combined. Let cool to room temperature, then refrigerate for at least 1 hour. - Freezing
Pour the mixture into your jar Ninja Creami or Ninja Swirl, seal tightly with the lid and place in the freezer for 24 heures, flat. - Transformation into ice
Remove the jar from the freezer, place it in the outer bowl of your machine and start the program Ice Cream. - Incorporating the popcorn pieces
Roughly crush the caramel popcorn set aside in step 1. Make a well in the center of the ice cream, all the way to the bottom of the container, pour the crushed popcorn into the well, and then start the program. Mix-In to distribute them evenly. - Service
Enjoy immediately to appreciate the contrast between the creaminess of the ice cream and the crunch of the popcorn, or place back in the freezer for 20 to 30 minutes for firmer scoops.
Notes
- Homemade vs. store-bought popcorn: Homemade caramel popcorn has the advantage of being less cloying and staying crunchy longer. If buying store-bought, choose one that's nice and crispy, not soggy.
