Ingredients

  • 400 g of Greek yogurt (preferably at 10% fat content for greater smoothness)

  • 100 ml of whole milk

  • 3 tablespoons liquid honey

  • 2 teaspoons’quality vanilla extract

Directions

  • Mixture preparation
Take a large bowl and pour in the Greek yogurt. Gradually add the whole milk, stirring to avoid lumps. Add the honey and vanilla extract. Whisk vigorously for 2-3 minutes until perfectly smooth and homogenous. The mixture should be slightly frothy.
  • Potting
Carefully divide the mixture between the jars compatible with your ice cream maker (Ninja Creami or other ice cream maker). Fill the jars, leaving about 1 cm of space at the top, as the mixture will swell slightly during freezing. Gently tap the jars on the work surface to eliminate any air bubbles.
  • Freezing
Place the jars upright in the freezer and leave them to stand for a full 24 hours. This step is crucial: the preparation must be completely frozen and rock-hard before moving on to the next step.
  • Transformation into ice
Take a jar out of the freezer and immediately place it in your machine. Start the «Frozen Yogurt» program (or equivalent, depending on your machine). The machine will transform your frozen block into a creamy, airy texture in just a few minutes. If the texture isn't smooth enough after the first run, don't hesitate to run a «Re-spin» or «Mix-in» cycle.
  • Gourmet personalization
Once you've achieved the perfect texture, carefully spoon a well into the center of your ice cream. Pour in a generous drizzle of liquid caramel and sprinkle the top with crushed pink praline. Alternate layers of ice cream and filling for a spectacular marble effect.

Notes

  • Choice of yogurt Choose an authentic Greek yogurt with at least 10% of fat. Lighter versions will give a more crystallized, less creamy texture.
Fragrance variants You can replace the vanilla with almond extract or orange blossom, or even add the zest of an organic lemon for a tangier version.
Conservation Your frozen yogurts can be stored in the freezer for up to 2 weeks. Remember to cover them with plastic film after opening to avoid ice crystals.
Texture tip For an even creamier texture, add a tablespoon of vodka or limoncello to the preparation. Alcohol prevents excessive crystallization.
No ice cream maker If you don't have your own machine, take your mixture out of the freezer every hour for the first 4 hours and mix it vigorously with an electric mixer to break up the crystals.
Vegan version Replace the Greek yoghurt with thick coconut yoghurt and the milk with almond or cashew milk. Honey can be replaced by agave syrup.
Creative toppings Dare to combine! Cookie sprinkles, red fruit coulis, caramelized nuts, speculoos paste... Let your imagination run wild to personalize each tasting experience.
