100g of Ferrero Rocher (approximately 7 to 8 pieces)
25g of unsweetened cocoa powder
200g of oat milk
50g of liquid cream
75 g of powdered sugar
2 egg yolks
Directions
- Blend the Ferrero Rocher
Blend the Ferrero Rocher chocolates in a blender or with an immersion blender until you obtain the smoothest possible paste. Set aside. - Heating liquids
In a saucepan, heat the oat milk and liquid cream over medium heat until it just begins to simmer. - Bleaching the yolks
Meanwhile, whisk the egg yolks and sugar vigorously in a mixing bowl until the mixture turns pale and slightly frothy. Stir in the cocoa powder and whisk again until smooth. - Cook the cream
Pour a small amount of the hot milk over the egg yolk and cocoa mixture, whisking gently to temper it, then whisk in the rest more vigorously. Transfer the mixture to the saucepan and cook over low heat, stirring continuously with a spatula until it coats the spatula or reaches the desired consistency. 84°C with the thermometer. - Incorporate the Ferrero Rocher
Remove from heat, add the Ferrero Rocher paste and mix until fully incorporated. Let cool completely to room temperature, then refrigerate until completely chilled. - Freezing

If the texture seems grainy after the first cycle, restart the cycle. Re-spinto achieve an even creamier result.
Notes
- The finer the Ferrero Rocher are blended, the smoother and more homogeneous the base will be after baking — don't hesitate to blend thoroughly.
