Caramel ice cream recipe

300 ml of whole milk
200 ml of full-fat liquid cream
200 g of caramel
2 tablespoons sugar
Directions
- Prepare the caramel base
Pour the whole milk, cream, caramel and sugar into a large bowl. Mix thoroughly, ideally with an immersion blender, until smooth and lump-free. - Pour into jar
Pour the mixture into a pot compatible with the Ninja Creami Deluxe. Tap the jar lightly on the work surface to eliminate air bubbles and smooth the surface. - Freeze the preparation
Close the jar and place in the freezer for a few minutes. 24 heures. The base must be perfectly solid before being machine-washed to ensure optimum texture. - Ice turbining
The next day, place the jar in the Ninja Creami and select the Ice or Gelato, according to desired texture. Let the machine work until you obtain a well-formed ice cream. - Adjust texture (optional)
If the ice still feels a little firm, throw a Re-spin to make it even smoother and more melting.
Notes
- For an even more decadent effect, add pieces of soft toffee, fudge chips or a drizzle of caramel sauce just after mixing, then do a quick re-spin. The result is worthy of a restaurant dessert.
