50g of egg yolks

- Heating liquids
In a saucepan, heat the whole milk, cream and glucose over medium heat until boiling. - Bleaching the yolks
Meanwhile, vigorously whisk the egg yolks and sugar in a mixing bowl until the mixture whitens and becomes slightly frothy. - Making the custard
Once boiling, pour a small portion of the milk-cream mixture over the whisked egg yolks, whisking gently to temper them, then incorporate the rest, whisking more vigorously. Transfer the mixture back to the saucepan and cook over low heat, stirring continuously with a spatula until the mixture coats the spatula or reaches the desired consistency. 84°C with the thermometer. - Strain and cool
Strain the custard through a fine-mesh sieve into a clean bowl to remove any residue. Let it cool completely, then stir in the orange blossom flavoring. - Freezing
Pour the mixture into the jar of Ninja Creami or Ninja Swirl, seal tightly with its lid and place in the freezer for 24 heures, flat. - Transformation into ice
Once the base is completely solidified, place the pot in the machine and select the program. Ice Cream. For the Ninja Swirl, you can also choose the mode Soft Serve. - Re-spin if necessary
If the texture seems grainy after the first cycle, restart the cycle. Re-spinto achieve an even creamier result.
Notes
- The orange blossom aroma is very strong — start with 8g and adjust to your taste before freezing, as the intensity diminishes slightly after freezing.
