Thanks to egg yolks, generous cream and quality dark chocolate without sugar, you get a texture comparable to that of an artisan ice-cream maker, with no concessions on taste intensity.

Perfectly suited to low-sugar or keto-friendly diets, depending on the chocolate selected.

Ingredients

  • 6 egg yolks

  • 1.5 to 3 teaspoons powdered sweetener sugar-free

  • 300 ml full-fat cream

  • 225 ml whole milk

  • 150 g dark chocolate sugar-free (or β‰₯ 90 % of cocoa)

Directions

  • Preparation of yolks with sweetener
    In a mixing bowl, vigorously beat the egg yolks with the powdered sweetener until the mixture is clear, smooth and slightly airy. The sweetener must be completely dissolved to avoid a grainy texture later on.
  • Reheating cream and milk
    Pour the liquid cream and whole milk into a saucepan. Heat gently over medium heat until the mixture is hot, but never boiling.
  • Dissolving chocolate
    Stir the chopped dark chocolate into the hot liquid. Stir gently until completely melted, creating a perfectly smooth, homogenous preparation.
  • Making the custard
    Gradually pour the hot chocolate mixture over the egg yolks, whisking continuously to temper them. Return the mixture to the saucepan and continue cooking over a low heat, stirring continuously until the cream coats a spoon, but never bring to the boil.
  • Cooling and freezing
    Transfer the mixture into the Ninja Creami Deluxe. Leave to cool completely at room temperature or in a cold water bath, then close tightly and place in the freezer for a few minutes. 24 heures, in horizontal position.
  • Turbining with Ninja Creami Deluxe
    Place the pot in your Ninja Creami Deluxe and activates the Ice Cream or Gelato.
    If the consistency still seems slightly firm, run a cycle Re-Spin to obtain a perfectly silky, melting ice cream.

Notes

  • This sugar-free chocolate ice cream becomes even creamier after a few moments at room temperature. It is easy to form into elegant scoops, even after refreezing.
