Ingredients

  • 40 g semi-salted butter, at room temperature

  • 180 ml full-fat cream

  • 150 ml whole milk

  • 6 egg yolks (large)

  • ¾ teaspoon vanilla extract

  • 90 g erythritol powder

  • 1.5 teaspoons caramel flavoring sugar-free

Directions

  • Creating the sugar-free «caramel» base
    In a saucepan, gently melt the semi-salted butter with the erythritol over low heat. Stir gently to combine, creating a sugar-free caramelized base.
  • Liquid incorporation
    Gradually pour the hot cream and then the hot milk into the saucepan, whisking vigorously to obtain a perfectly smooth, homogenous mixture. Return to a low heat for a few moments to bind well.
  • Tempering egg yolks
    In a bowl, whisk the egg yolks. Pour a small amount of the hot mixture over them, whisking constantly to temper them without overcooking.
  • Cooking custard
    Return the tempered yolks to the saucepan. Heat over medium heat, stirring continuously with a whisk or silicone spatula. The mixture should thicken gradually, reaching a temperature of between 74 and 79 °C, Never bring to the boil.
  • Fragrance and filtration
    Remove from heat, stir in vanilla extract and sugar-free caramel flavoring. Pour the mixture into the jar of the Ninja Creami Deluxe passing it through a fine sieve to ensure a perfectly silky texture.
  • Cooling and freezing
    Place the jar in an ice water bath until completely cooled. Close tightly and place in the freezer for a few minutes. 24 heures, in horizontal position.
  • Turbining process
    The next day, place the pot in your Ninja Creami Deluxe and activates the Ice Cream.
    If necessary, run a cycle Re-Spin for an even more melting texture.
